This low carb deliciousness is super easy to customize and make with your own flair! It is comfort food at it’s finest. Be careful because, even though it’s low carb, you can go overboard EASILY!! Enjoy!
INGREDIENTS
Dough
- 2 tbsp cream cheese
- 1 3/4 cup mozzarella cheese
- 3/4 cup almond flour
- 1 egg
- ⅛ tsp salt
Toppings
- ½ lb ground beef
- 2 tbsp taco seasoning
- 2-3 tbsp water
- 1 cup sharp cheddar, shredded
- ¾ cup of your favorite salsa
- 2 cups romaine lettuce finely shredded
- 4 oz black olives sliced
- ½ cup red onion small chop
- ½ cup tomato small chop
- ½ cup cilantro fine chop
- ½ cup sour cream or ranch dressing
- 1 avocado, chopped
- ¼ cup taco sauce or hot sauce
- 2 tbsp almond milk or water to thin
DIRECTIONS
Preheat oven to 425F
In a large skillet brown your ground beef. Add taco seasoning packet and a few tablespoons of water. Set aside.
For the dough: Melt the mozzarella cheese and cream cheese in the microwave for 30 seconds to 1 minute on high. Take out and stir. Put back in microwave for 30 seconds, then stir again. Depending on your microwave you will may need an additional 30-60 seconds until all melted and combined.
Mix together the egg, almond flour & salt in a separate bowl. Once combined, add the egg and almond flour mixture to the melted cheese mixture until it forms into a sticky ball of dough.
Place the dough between two sheets of parchment paper on counter and use a rolling pin to roll into whatever shape you would like. Make sure it is evenly rolled out and not too thin!
Keeping the dough on the bottom piece of parchment paper, move the pizza dough to your baking sheet (discard the top piece of parchment paper).
Spoon the salsa out onto the dough and spread evenly. Repeat with the taco meat and cheddar cheese.
Bake for 10-12 minutes until cheese is melted and crust is cooked to your liking (I like mine on the softer side!)
Remove pizza from the oven and add your toppings however you would like! You will probably need a fork for this pizza!
