Split Pea Soup is super nutritious and a perfect cold weather meal! Peas are an excellent source of vitamin A, vitamin C, folate, thiamine (B1), iron and phosphorus; they are also rich in protein.
In an Instant Pot it literally takes about 30 minutes total including prep and cook time!
**To make this in a slow cooker/crock pot just sauté the veggies and then cook on high for 4 hours or low for 8 hours.
INGREDIENTS
- 2 Cups dried Split Peas (no need to soak)
- 3-4 Celery Stalks, diced
- 1 onion, diced
- 2 cups carrots, diced
- 4 1/2 Cups Chicken Bone Broth
- 2 Cups Diced Ham
- 1/2 tsp Pepper
- 2 Tbs Butter
- 1 Tbs Garlic, minced (about 2 cloves)
DIRECTIONS
Turn Instant Pot to sauté and wait until it reads “Hot”
Add butter and garlic to Instant Pot and sauté.
Add onion and sauté for several minutes, until the start to turn translucent.
Add ham and sauté for another couple of minutes.
Turn Instant Pot Off. Add broth and stir, making sure to scrape any stuck ingredients off of the bottom of the pot (deglaze)!
Add diced carrots, and celery, split peas, pepper and stir.
Close lid and set to manual for 15 minutes.
Quick Release pressure and open lid.
Stir the soup well to make the peas smoother.
