If you are looking for a delicious meatloaf recipe that is not the same old thing….look no further! This is a crowd pleaser! Even though it tastes like comfort food, it’s super nutritious. This is made gluten free using almond flour instead of bread crumbs. It’s not dairy free, but you could absolutely substitute the mozzarella cheese for a dairy free option if you need to.
- 2 eggs, lightly beaten
- 1 cup pizza sauce, divided (look for no sugar added)
- 1 cup almond flour or gluten free bread crumbs
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 1 tsp dried oregano
- 1 garlic clove, minced
- 1/2 tsp pink Himalayan salt
- 1/4 tsp ground pepper
- 2 lbs ground beef
- 1 lb Italian sausage
- 1/2 lb sliced deli ham
- 2 cups shredded mozzarella, divided
- 1 jar (6 oz) sliced mushrooms, drained
Preheat oven to 375F.
In a large bowl, combine the eggs, 3/4 cup pizza sauce, almond flour, onion, green pepper, oregano, garlic, salt + pepper.
Crumble the beef and sausage into the mixture; use your hands to mush it all together well.
On a piece of parchment paper, pat the meat mixture out into a 12 x 10 inch rectangle.
Layer the ham, 1 1/2 cups of mozzarella and mushrooms over the meat, making sure to leave about 1 inch along the edges.
Starting at a short end, roll the whole thing up like a jelly roll. Make sure to pat the seam so that the stuffing doesn’t come out.
Place the meatloaf/roll into a 13 x 9 inch casserole dish with the seam side down. Brush the remaining pizza sauce on the top.
Bake uncovered, 1 hour. Sprinkle with the rest of the mozzarella. Bake another 15-20 minutes, until no longer pink inside.
Let set for a few minutes and then transfer to a serving platter. Enjoy!
