This is a bunch of cheesy goodness right here! Talk about comfort food! You could easily customize this recipe with things like olives, sundried tomatoes, even pesto! Yum!
INGREDIENTS
Crust
- 1.5 cups mozzarella, shredded
- 2 oz cream cheese
- 1 egg
- 3/4 cup almond flour
- 1/2 tsp baking powder
Filling
- 1/2 cup ricotta
- 1 cup mozzarella, shredded
- 1 cup Italian sausage, cooked and crumbled
Topping
- 1 egg
- 1 tsp dried oregano
- 1 tsp coarse salt
DIRECTIONS
Preheat oven to 375F.
Add 1.5 cups shredded mozzarella and 2 oz cream cheese to a microwave safe bowl and melt in 30 degree intervals; stirring well in between. Should take about 90 seconds total. Do not over cook.
Add to the melted cheeses: 1 egg, almond flour and baking powder.
Mix the ingredients well with your hands or a wooden spoon until well incorporated and you have a large dough ball.
Roll the dough into a large circle between two pieces of parchment paper.
Remove the top sheet of parchment paper and transfer bottom layer with the dough on it to a baking sheet.
Get your filling together by mixing the ricotta, mozzarella and cooked sausage together in a medium sized bowl.
Place the filling on one side of the dough circle, keeping some space around the edges so you have extra dough to seal the calzone.
Fold the other half of the dough over and seal the edges with your fingers or a fork.
Beat the remaining egg and brush the egg over the top of the calzone.
With a knife, make 3-4 slits in the top of the calzone.
Sprinkle the calzone with dried oregano and salt.
Bake 20-25 minutes or until it starts to turn golden.
