You can absolutely use rice for this bowl but we kept ours low carb by using riced cauliflower. Which…if you haven’t had it you should! I was NOT interested in trying it only because I love rice and I’d almost rather just go without than have a substitute for some things. However, I was pleasantly surprised! It is really good and quite versatile. Just be sure not to overcook it (don’t ask me why I know this is a thing)! Ha!
Bowls are awesome as meals especially because they are easy to customize! You could use steak if you want too! Ground beef is delicious in this and easy.
If you are keto and worried about the pineapple, don’t be! In order to make it fit your macros for the day, just budget for the carbs in your dinner (or lunch) and don’t have a ton of pineapple! Keep it minimal with more of the beef and veggies and you’ll be good to go.
INGREDIENTS
- 1 lb ground beef (Grass fed and finished of course!)
- 1 yellow onion chopped
- 1/2 green bell pepper chopped in small pieces
- 2 garlic cloves minced
- 2 Tbsp ketchup (Go for low sugar. Primal Kitchen has a good one!)
- 2 Tbsp brown sugar (Swerve offers a keto version!)
- 2 Tbsp rice vinegar
- 2 Tbsp soy sauce
- 1/2 cup pineapple juice
- 1 cup pineapple cut into 1″ chunks
- 1/2 red bell pepper cut into 1″ chunks
- 1/2 green bell pepper cut into 1″ chunks
DIRECTIONS
Add the beef, yellow onions, 1/2 green bell pepper (chopped small) and garlic to a skillet and cook until the beef is cooked through and the onions are softened.
Add the ketchup, brown sugar, rice vinegar, soy sauce and pineapple juice and cook for 3-4 minutes then add in the pineapple chunks and larger chunks of bell peppers mix well and cook for an additional 3-4 minutes to soften the bell peppers.
