If you love Biscuits and Gravy but are avoiding them because of added carbs, this is a must try for you!
There are a ton of low carb/Keto Biscuits and Gravy recipes out there and after trying some and tweaking things this is what we came up with and LOVE!
INGREDIENTS
Biscuits
- 1.5 cups almond flour
- 1/4 cup sour cream, full fat
- 1 egg
- 2 Tbsp butter (from grass fed cows)
- 1 tsp baking powder
- 1 tsp garlic powder
- 1/2 tsp salt
- 1 cup shredded mozzarella
Gravy
- 1 lb pasture raised ground pork (we used the breakfast flavor)
- 1-2 tsp xanthan gum
- 1 cup heavy whipping cream
- 1 cup chicken broth
- Salt & pepper to taste
DIRECTIONS
Biscuits
Preheat oven to 350 F.
Mix all ingredients, aside from mozzarella, well then gently add the mozzarella.
Drop 12 biscuits onto a parchment paper lined baking sheet. Bake for about 25 minutes or until golden.
Gravy
In a large saucepan over medium heat, cook ground pork until it is no longer pink, season with desired amount of salt and pepper scoop into a separate bowl and set aside.
In that same saucepan with leftover pork fat, add the heavy whipping cream and whisk in the xanthan gum. After a few minutes on medium heat and whisking, add the broth. Keep whisking before you add more xanthan gum; it will take several minutes to start to thicken.
* I like my gravy thicker with more pork. You can absolutely choose to add more heavy whipping cream and/or broth make more gravy and a thinner consistency!
Once your gravy starts to thicken up, add the cooked pork into the gravy and cook for several more minutes.
This recipe will absolutely fit into a ketogenic diet; just beware of eating too many things with Almond Flour as those things tend to go down pretty easily and, although low carb, they do add up fast!
